But when the idea to sell prepared meals came up, he decided to come home and join the family business. Nutre launched in May 2017. It served mostly family and friends to begin with, but it slowly grew through word of mouth. It was a phase of trial and error, the brothers said, during which they honed their recipes and business model. The website launched this past December, letting the com- pany reach a wider audience. Along the way they expanded the kitchen at Toscana Ris- torante so it could double as a production facility for Nutre. Meals are generally assembled overnight, after the restaurant side of the business has closed up for the night. e brothers, who admit they haven't gotten much sleep in the past year, stay up and pitch in measuring, weighing, and packing.
