Although construction was delayed for a considerable amount of time, the new Jeff Ruby's Steakhouse, Lexington debuts in late April. While others may have abandoned the project, Ruby doubled down on his commitment to it. That's not surprising considering as a kid he drew the name Kelso on the back of his practice football jersey for inspiration and later made a career out of exceeding expectations. "I was always optimistic it was going to happen, even when my attorneys and my other team members were telling me it probably wasn't going to happen," said Jeff Ruby. "You talk about an uncontrolled environment, this was an uncontrolled environment." The Lexington branch of the Jeff Ruby empire takes up 10,000 sq. ft. of the downtown development named City Center. Originally called CentrePointe, the residential, commercial, and retail project started in 2008. It was originally supposed to be completed in time for the 2010 FEI World Equestrian Games, but a myriad of setbacks delayed it for years on end. Ruby maintained his desire to have a restaurant in the heart of the Bluegrass through it all. "There are so many things that nobody even knows about," he said. "But it's just something we had to do. We have a lot invested in this one."
