"I knew guests would love it," says Webber. "It's filled with black and blue—not jammy red—fruit, and the Grenache provides spice and lifts it. It's a dense wine without being chewy or fat and goes really well with food," particularly the sizzling meats the family's restaurants are famous for serving. "We work a lot on offering guests things you can't get elsewhere, like the vegetables grown on our farm," says Webber. "So this wine continues that same thread of being made by our family." At Pellana Prime Steakhouse in Peabody and the Danvers-based Alto Forno and Dan- iella's Café Market, you'll find the Raymond Reserve Sommelier's Selection red, created in part by beverage director Nick Grimshaw. "In the spring of 2014, I was invited to Raymond Vineyards in Napa with about a Pellana's beverage director, Nick Grimshaw dozen other wine professionals from around the country," says Grimshaw. "We spent three days tasting single barrels to come up with different blends. We divided into teams of two and were working with Cabernet Sauvignon, Merlot, and Cabernet France, and my team won." The restaurants are now pouring the 2016 vintage, which Grimshaw describes as having "rustic herb elements with dark fruit, a nice, soft integrated tannic structure, and flavors of baked spice and fruitcake. At Pellana Prime Steakhouse he recommends it with grilled lamb chops or a nice rib eye. At Daniella's he suggests the sliced tenderloin with mushroom truffle risotto, and at Alto Forno he likes the wood-fired lamb.
