NORTHSHOREMAG.COM 16 APRIL 2020 Servers at Eddie V's Prime Seafood, the new fish spot in Burlington, wear crisp white jackets and bowties as they bustle back and forth between the open kitchen and the tables. Every night, the pleasant sounds of live jazz waft through the air from the lounge. Large chandeliers dominate the sunken main dining room, which is ringed with curvy upholstered banquettes. It's the kind of place where your server has a business card. In short, stepping into this restaurant feels like stepping back in time, to the Roaring Twenties, when dining out was an event. The menu wouldn't appear out of place back then either. Elegant dishes like steak tar- tare, prepared tableside, and other steakhouse favorites like the iceberg lettuce wedge are timeless for good reason. But Eddie V 's brings a modern spin as well: That wedge is updated with a cross of crispy bacon and a house-made blue cheese and buttermilk chive dressing— much lighter than a classic blue cheese. The Burlington location is one of the newest in the restaurant group, which includes a Boston spot that also opened last year ; all of their locations share a classic vibe and live jazz. THE MENU Starters Iceberg BLT, $13 Signature Steak Tartare, $21 Entrées Bacon Wrapped Filets "Oscar" Style with King Crab, $57 Mediterranean Branzino, $40 Sides Roasted Broccoli "Caesar Style," $11 Butter Poached Lobster Mashed Potatoes, $19 Dessert Dark Chocolate and Crushed Toffee S'mores, $11 Butterscotch Panna Cotta, $10 Cocktail XO Envy, $24 E AT + D R I N K Sink into the Jazz Age and start with that steak tartare. The elegant presentation will set the mood for the rest of your evening, as the server wheels out a cart and whisks the egg yolk into the prime filet mignon, dressing it with olive oil, Worcestershire sauce, Tabasco, capers, parsley, and Dijon mustard.
