Lentils and Mixed Vegetables

Sometimes, you have to remember to eat healthily. That way, you can eat that
entire quart of ice cream with zero guilt. But eating healthy can be confusing.
Obviously, you know to eat more fruits and veggies and avoid the processed
stuff. But sometimes, you still draw a blank on how to ensure that you have the
absolute healthiest meal ever created? That's when science is here to help.
Scientists at Leatherhead Food Research have actually designed a meal that is
perfectly balanced. I've managed to recreate it. Mostly. I present the "Lentils
and mixed vegetables with a side of mixed greens."
Ingredients
· 1 1/2 cups green lentils
· Olive Oil
· 1/2 yellow onion, diced
· 2 cloves garlic, minced
(Don't let me dictate your garlic level.
That's your soul.)
· 1 zucchini squash, diced
· 1 bulk carrot, diced
· 2 celery stalks, chopped
· 1 russet potato, diced
· Salt and pepper
· 1 teaspoon ground coriander
· 1 teaspoon ground cumin
· 1 teaspoon turmeric powder
· 1/2 teaspoon ground cinnamon
· 1/2 teaspoon cayenne pepper
· 3 cups canned diced tomatoes
· 2 1/2 cups water
· 1 cup chopped fresh parsley
· A bag of mixed greens
· 1/4 cup good olive oil
· 2 tablespoon fresh lemon juice
· Loaf of multigrain bread, lovingly made yourself
