Meals for One Pasta Carbonara Contributed by Patricia Craving something creamy, salty and comforting, and you don't think mixing ice cream and chips equal a proper dinner? Then this dish is for you. Pasta Carbonara is quick, easy, filling, and quite specularly tasty. Bonus? You'll never need to pay restaurant prices for this traditional Italian dish ever again. Ingredients · 2 ounces dry spaghetti · 1 piece thick bacon (or use the whole packet. It will be our secret.) · 1 clove garlic chopped up (or follow your heart.) · 1 large egg · 1 tablespoon grated Parmesan cheese · ⅛ teaspoon kosher salt · ⅛ teaspoon coarsely ground black pepper · 1 tablespoon chopped parsley (optional for garnish if you feel fancy) 1) Boil water. Put salt in the water. Trust me. It adds a kick. Then put in the spaghetti and cook for 8-10 minutes. Don't let it get mushy. You are better than that, and I believe in you. Drain the pasta, keep ½ cup of the pasta water to use in the sauce if you need it. 2) Meanwhile, cook that bacon. Hear that sizzle. Enjoy that sizzle. Remove bacon when done to how you like it and drain on a paper towel-lined plate. In all that tasty fat, add the garlic to the pan and cook for 30 seconds. Add the pasta to the pan and toss for 30 seconds. Remove pan from heat. Like onto an entirely separate burner. Instructions 3) Crack an egg on top of that mess and whisk it hard. You can do this in a separate bowl, but dishes suck. Add Parmesan, salt, and pepper to taste. Mix until it's thick but not scrambled. If it starts looking scrambled, add the pasta water little by little. Don't, for the love of food, dump it in all at once. Just so it looks nice and slick. 4) The residual heat will cook the egg. So don't panic. If you are panicking, just put it back on the burner. 5) Crumble the cooked bacon and add it to the pasta. Toss it all together. Add more salt, pepper and Parmesan as required.
