Just two days after they learned they'd be catering this massive event, German and Zarak touched down in Iceland. Their mission? To source all of the ingredients, servers, and Icelandic assistant chefs they'd need to cater a wedding for about 115 guests in a country located just outside the Arctic Circle. Bam and Nikki wanted delicious food that would be familiar to their guests, but German and Zarak soon found out that sourcing ingredients in Iceland is nothing like sourcing them in the United States. "Everything there is imported. They have such an incredibly short growing season," German says. For instance, in the United States, getting fresh, high-end cuts of imported beef is no big deal. But in Iceland, any imported meat must be frozen for 30 days before it's sold. "For me to think on September 20 that I was going to get Kobe beef on October 5 was out of the question," German says. That's when German and Zarak realized that they could put an Icelandic spin on their original menu, substituting ingredients like ground beef for ground Icelandic lamb, which German says is the equivalent beef in the United States. The result was feta, eggplant, and Icelandic lamb sliders served with lemon and honey tahini and tzatziki dressings with baby arugula. Sourcing produce wasn't easy either; so much is imported.
