For the last two decades, we have been focusing exclusively on one of those things — cutting to add value — in the pages and websites of Fresh Cut magazine. We also know there is a smorgasbord of other ways to convert raw product, including freezing, canning, saucing, juicing, dehydrating and more. Each of those methods has its own unique challenges and opportunities and its own set of stories to tell. This convinced us that it's time to add to the menu. We are pleased to introduce Produce Processing magazine. Rather than include produce into a larger platform of other food processing topics, our team of writers and industry thought leaders will concentrate exclusively on the unique needs of fruit and vegetable processors and their products. Readers will gain valuable insight about issues that cross all boundaries of produce processing, such as food safety, labor, marketing, packaging and transportation. We will pay special attention to innovations in equipment, practices and products. Each issue will focus on a particular segment of produce processing. Fresh- cut will continue to be a major focus, but now we will include valuable information about the frozen, juice/ sauce, dried, canning and dehydrated/powder markets.
