Lemon herbed shrimp
with white beaNS

½ small shallot, finely chopped
5 garlic cloves, minced, divided
2 Tbsp. fresh lemon juice
1½ tsp. lemon zest, divided
3 Tbsp. fresh parsley, minced, divided

raw shrimp, peeled and deveined
1 tsp. seafood seasoning
¼ cup Big Y butter
2 15.5-oz. cans Big Y no-salt-added
cannellini beans, rinsed and drained

In a shaker jar with a tight-fitting lid, combine shallot,
1 minced garlic clove, lemon juice, ½ teaspoon lemon
zest, 1 tablespoon parsley and salt and pepper to
taste. Slowly add oil, cover and shake to blend; store
in refrigerator until ready to serve.
In a large bowl, toss together shrimp, remaining garlic,
seafood seasoning and pepper to taste.
In a large skillet over medium heat, melt butter. Add
shrimp and sauté for 5 minutes or until shrimp turn
pink and are just cooked through. Stir in white beans
and additional salt and pepper to taste; continue to
cook for 2 minutes or until warmed through. Serve
garnished with remaining parsley and lemon zest.
