4 SUPER MEALS SUPER MEALS SUPER QUICK, SUPER QUICK , In a medium bowl, whisk together juice from 1 orange and 1 tablespoon orange zest, juice from 1 lime and 1 tablespoon lime zest, 2 tablespoons sesame oil, 2 tablespoons rice vinegar, 1 tablespoon peeled and freshly grated ginger, 2 minced garlic cloves, 1 seeded and minced red chili pepper and ¼ teaspoon coarse salt; set aside. Peel 1 large, firm mango and, using a vegetable peeler, slice half the mango into ribbon-like strips; place in a large bowl and add 2 cups shredded SuperBird® rotisserie chicken, 1 large sliced cucumber, ½ large julienned green bell pepper, ½ large julienned yellow bell pepper and 2 medium, green part only, thinly sliced green onions; add dressing mixture and toss to coat well. Divide 4 cups torn leaf lettuce between 4 bowls and evenly top each with ¼ chicken and vegetable mixture and ¼ cup crispy rice noodles and serve.
