My foodie sister-in-law, Kate, often does the cooking. Although she's not trained as a chef, her silky gravy, but- tery mashed potatoes, and moist turkey roasted to perfection could rival any five-star restaurant. My brother Richard, another culinary master, often jumps into the kitchen with Kate, and the recipe banter begins. It's always a fun atmos- phere and the family gathering that I look forward to all year. One thing that makes Kate's dinner so delicious is that she sources most of her ingredients from local farms, making eve- rything taste fresh. In this issue, we visit farm chef Carolyn Grieco as she prepares a feast for the farmers at Appleton Farms in Ipswich. Operated by The Trustees of Reservations, the farm grows its produce using sustainable practices. This year, they had a great growing season, thanks to Mother Nature and hardworking farmers, and Grieco's dishes reflect the flavors of their harvest. We also visit three pastry chefs on the North Shore baking deli- cious pies using apples from Amesbury's Cider Hill and Peabody's Brooksby Farms, which give the pies an authentic North Shore sweetness. The Bancroft's pastry chef, Jennifer Cobb, offers her recipe for an apple and cranberry pot pie (also our cover model) on page 222. Fall is the time to harvest oysters in New England. Raised mainly in Massachu- setts' southern waters, these succulent, briny mollusks become the stars of raw bars on the North Shore. Two chefs—Matt O'Neil from The Blue Ox in Lynn and Serie Keezer of Salem's Finz—share their take on dipping sauces to enhance the salty experience. We also take a look at the his- tory of the spice trade in Salem. Stories of mutiny, pirates, and distant lands make for an intriguing read.
