CHEF Trevor Douglas' past assignments include being Executive Chef at the Hotel Viking in Newport, R.I., and the Petit St. Vincent Resort in the West Indies. He was trained at the Birmingham College of Food and Domestic Arts in the United Kingdom. Chef Douglas later went on to cook at Four Seasons Hotel in London; Brennan's Restaurant in New Orleans, where he learned cooking in the Creole tradition; he has also worked as chef instructor at the New England Culinary Institute in Essex, Vermont.
