Drink: Homemade Apple Cider Recipe by Scollins Ingredients: 10 apples (quartered) 3/4 cup white sugar 1 tablespoon ground cinnamon 1 tablespoon ground allspice Directions: Place the apples in a large stockpot and cover them with at least two inches of water. Mix in the sugar, cinnamon, and allspice. Boil uncovered for 1 hour, then cover, reduce the heat, and simmer for 2 hours. Strain the apple mix through a fine mesh sieve and discard the fiber. Drain the cider again through a cheesecloth- lined sieve and refrigerate until cold. Appetizer: Cream of Pumpkin Soup Recipe by Thomas Ingredients: 3 tablespoons margarine (softened) 1 tablespoon brown sugar 1/4 teaspoon ground cinnamon 4 slices whole wheat bread 1 cup chopped onion 2 tablespoons butter (melted) 2 (14.5 oz.) cans chicken broth 1 (15 oz.) can pumpkin puree 1 teaspoon salt 1/4 teaspoon ground cinnamon 1/8 teaspoon ground ginger 1/8 teaspoon ground black pepper 1 cup heavy whipping cream Directions: Preheat the oven to 400 degrees and mix the butter, brown sugar, and cinnamon. Spread on each bread slice and place butter-up on a baking sheet. Bake for 8 to 10 minutes (or until crisp and topping is bubbly), and cut each toast into 8 triangles or squares. Sautee the onion in butter until tender. Stir in 1 can of chicken broth, bring to a boil, then cover and reduce heat, simmering for 15 minutes. Blend or process the broth mixture until smooth and return to the saucepan. Add the other can of broth, pumpkin, salt, ground cinnamon, ground ginger, and ground pepper, mixing well. Bring to a boil, cover, reduce the heat, and simmer for 10 minutes (stirring occasionally). Mix in the whipping cream and heat through, but don't boil. Ladle into soup bowls and top with the cinnamon croutons. Dinner: Grilled Turkey and Swiss Sandwich Recipe by butterfl y1x Ingredients: 1 tablespoon mayo 2 slices thick-cut rye bread 2 slices Swiss cheese 2 slices leftover turkey meat (or to taste) 1/4 cup baby spinach (or to taste) Directions: Set your oven rack about 6 inches from the heat source and preheat the broiler. Spread mayo onto one side of each piece of bread and layer with Swiss cheese, turkey, and spinach. Top with the second bread slice and place the sandwich on a baking sheet. Broil in the oven until it's fully heated and the cheese is bubbling (about 5 minutes). Dessert: Apple Crunch a la Mode Recipe by akasten06 Ingredients: 6 tart apples (peeled/thinly sliced) 1 cup white sugar 1 cup cold water 1 tablespoon cornstarch 1 teaspoon vanilla extract 1 cup all-purpose flour 1 cup packed brown sugar 3/4 cup old-fashioned rolled oats 1/2 cup butter (melted) 1/2 cup chopped walnuts 1/2 teaspoon ground cinnamon Directions: Preheat your oven to 350 degrees and grease a 9-by-13-inch baking dish. Spread the apples in the dish, then whisk the white sugar, cold water, cornstarch, and vanilla extract in a small saucepan. Cook over medium heat until clear and the sugar is dissolved (about 5 minutes). Pour the hot syrup over the apples. Mix the flour, brown sugar, oats, melted butter, walnuts, and cinnamon together until crumbly. Scatter over the fruit mix. Bake until the top is brown and the crumble is bubbly (about 1 hour).
