Brady is a rum aficionado, and he likes steering The Dearborn's guests towards the Caribbean Old Fashioned ($14), with Cruzan single-barrel-aged rum, oloroso-demerara syrup and a bar spoon of salted coconut cordial. "It certainly showcases the rum inherent sweet- ness, but I enjoy it when our guests sip it and learn that rum is a serious, spirit, and not just the base for Pina Coladas and Cuba Libres," he notes. Speaking of rum, it's also the basis for a drink inspired by the hottest Broadway show right now. After staff discovered that Hamilton was coming to Chicago for an extended run (the restaurant is smack in the middle of the Theatre District), Brady researched the historical figure, who was born in the eastern Caribbean. He also learned that port, cocoa and sherry were often used in the Revolutionary War era. The result was the Hamiltini ($13), which combines Cruzan rum with Lustau East India solera sherry (an easy-drinking blend of oloroso and PX styles), demerara syrup (a form of smuggler's currency back then), lemon juice and Peychaud's bitters. The Hamilton cast has been known to indulge in one or two after their evening performances, according to Brady.
