Side Dish: Chef John's French Fries Recipe by Chef John Ingredients: 2 russet potatoes, cut in even strips 8 cups vegetable oil Salt, to taste Directions: Soak the sliced potatoes in a large bowl of water for about half an hour, then pat them dry with paper towels. Heat the oil in a deep- fryer or large saucepan to 275 degrees Fahrenheit before carefully adding the potatoes and frying for about 5 minutes, stirring and flipping the slices every once in awhile. Remove the potatoes from the oil with a slotted spoon, drain them on a paper towel, and let them fully cool. Now heat the oil to 350 degrees Fahrenheit and fry the slices again until they're golden brown (about 5 to 6 minutes). Blot them with a paper towel, salt to taste, and enjoy. (Note—serves 4.)
