Each community had its own factory. In the early days, the cheese, packed in ice, was transported to Kingston on the Rideau Canal by steam boats. Later, the boxed cheese was drawn into Westport in lumber wagons and loaded onto refrigerated rail cars at the B&W train station every Friday.The cheese was then shipped to Montreal and then by boat to England. The "Golden Tri- angle" area of Ontario was considered to make the best cheddar cheese in the world, perhaps because the milk was, and still is, mostly produced by the fine herds of Hol- stein cows.
