BEET AND CASHEW ALFREDO This is a delicious, colorful, vegan twist on the famous Alfredo Fettuccine made with cashew sauce and beets. This twist is tastier and free of saturated fats. Beets are high in vitamin C, fiber, and minerals like potassium and the cashew gives the perfect, rich, creamy coat to the linguini. I just loved the color and the hint of sweetness which married beautifully with the garlic, onion and other flavors. Here are the ingredients to coat 1 packet of linguini: • 1 C of pickled or steamed beets • 1/2 C of raw cashew • 1/2 a purple onion • 1-2 cloves of garlic • generous squeeze of lemon • 1 tsp of sea salt • 1/2 tsp of cracked black pepper • 3 tbsp of olive oil • 1/2 C water Blend together thoroughly and garnish with fresh rosemary LINGUINI: • Cook with olive oil, sea salt, and stems of rosemary LOOKS TAST Y BY DAN SANCHEZ M ost nutritionists are good at telling you what you should eat, as well as what the health benefits are for making better nutritional choices. Nutritionists like Fay Kazzi, however, has a different approach to food, providing a new way for her clients to like the healthier foods they may have never tried or tasted. Kazzi earned a Master's Degree in Nutrition and Dietetics, and is currently a Registered Dietitian. She is also pursuing a PhD specializing in the influence of probiotic on bariatric sleeve gastrectomy. This is one of the reasons she is on the advisory board for the Kyle MacFarlane Foundation. Early in her career, she understood the philosophical transformation in the way food is perceived today. "Food and its preparation on certain levels of society can be described as a fine art fueled by an intensely competitive industry and drizzled with Olympian pride," said Kazzi. "In this day and age, a cultural shift is happening where good food could win an academy award if that was possible. It has become its own celebrity, there's an entire national network devoted to food and star chefs.
