15 T here are dinner reservations, and then there are dinner reservations. At ION Harbour by Simon Rogan, the latter come with two Michelin stars, a spectacular view of Valletta's Grand Harbour and a twelve-course tasting menu that promises plenty of surprises along the way. I had visited ION Harbour before, but not since it earned its second Michelin star and underwent a little revamp (not that it ever needed one). So, when my guest and I were invited to return, I was curious to see what had changed – and, more importantly, what would land on our plates. Located on the fourth floor of Iniala Valletta, ION Harbour is Simon Rogan's first restaurant in the Mediterranean. The celebrated British chef is known for his farm-to-table philosophy, with a focus on seasonality, sustainability and locally sourced ingredients. Here, that approach takes on a distinctly Maltese character, with local farmers, fishermen and growers helping shape a menu inspired by the islands' natural produce. The setting certainly knows how to make an entrance. With the Grand Harbour stretching out beyond the windows, it is difficult not to spend the first few minutes admiring the view. We began with a glass of bubbly before our twelve-course dinner got underway. The view is such a big part of the experience that even the seating has been designed around it. ION Harbour's distinctive half-moon tables allow couples to sit side by side, rather ION has one of Malta's most beautiful views, and I wanted everyone to enjoy it. The half-moon tables let couples sit side by side, taking in Simon's food and the Grand Harbour together. For me, that makes them incredibly romantic and unique to ION " "
