Poblano chiles used to makeit were harvested earlier in the maturation process while still green, then fi re roasted. URL: www.anchoreyes.com 10 SPYTAIL BLACK GINGER RUM Imported from France by Biggar & Leith, Spytail is based on a 19th-century recipe of ageing Caribbean Rum with fresh ginger and spices in the barrel. The rum is distilled in the Caribbean and then aged, spiced and blended at a distillery in the Cognac region of France. The Spytail brand "celebrates the French deep-sea pioneers and the submarines within which they plunged to terrifying new depths," the company says. Bottled at 40%-42% ABV. URL: www.ezrabrooks.com 12 LUSTAU VERMUT SHERRY VERMOUTH First launched in its native Spanish market last year, this sherry vermouth debuts in the U.S. this spring. Combines sherry wines and botanicals. The base wine is a blend of a sweet Pedros Ximenez and a dry nutty Amontillado, both aged separately for 10 years in their own soleras at the House of Lustau cellars in Jerez. The botanicals are macerated separately for aroma extraction. Wormwood, gentian, coriander and orange peel notes stand out. SRP: $22 per 750-ml. bottle.
