Nothing is premade," says Life Alive communications director Laura Aldo, who adds that customers are encouraged to add or subtract ingredients in any dish to make them personalized. "We always accommodate and are happy to." Aldo says that nearly anything on the menu can be made vegan, gluten free, nut free, dairy free, or soy free, often by removing, adding, or substituting ingre- dients. Other menu items are alternative diet–friendly all on their own, without sacrificing flavor, like the Elvis Alive smoothie, an indulgent nondairy, vegan favorite that includes peanut butter, cocoa, rice milk, banana, and non-dairy/ Edgy Veggie Vegan rolls from Opus are relished by alternative dieters.
